JOB DESCRIPTIONThe Cosmos Club, founded in 1878, is a private social club for men and women distinguished in science, literature and the arts or public service. Members come from virtually every profession that has anything to do with scholarship, creative genius or intellectual distinction.Summary/Objective: The Banquet Sous Chef is responsible for assisting the Banquet Chef with the ordering, preparation and execution of all hot and cold food banquet events. They will make sure their staff is working within an effective cost conscientious manner. Essential Functions: Assists with planning, organizing and controlling all banquet and garde manger related food productionMaintains daily logs for employeesMaintains responsibility in the hiring of their direct reports and monitors the proficiency of those employeesOversees the training and development of their employeesCoaches, counsels, disciplines and trains staff reporting to this positionAssists culinary management with developing banquet and special event menus that evokes change seasonallyAssists with developing standardized recipes and procedures for consistency and training purposesHandles daily testing and evaluates food products for qualityReceives and keeps current a valid ServSafe certification card (required on duty)Enforces the stewarding cleaning listCommunicates well in advance with food purchasing staff of all banquet related food items neededHelps maintainordering and receiving program in the absence of the purchasing agent to ensure proper quality and price on all purchasesOperates under all guidelines, policies and standards set by Cosmos ClubIs a dynamic role model for the team in all culinary aspectsCovers any shifts that need to be covered in the culinary departmentRequired Experience and Education:Able to express creativity through food selections, preparation and presentationAble to solve problems quickly under pressureBasic computer skills (typing, Word, printing)Four years or more culinary banquet experienceCulinary degree is preferred, but not requiredPhysical Demands: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.While performing the duties of this job, the employee is regularly required to walk, talk and hear.
