You will use your daily Prep Sheets to set priorities and make sure everything is ready on time. Use the Prep Cook & Dishwasher Checklists to start and organize your shift. These include your sidework and your responsibilities. Some of your important responsibilities include:Setting up the dish, prep, storage, and outside areasMaintaining the dish, prep, and storage, and outside areasClosing the dish, prep, and storage, and outside areasWashing, drying, and storing waresCompleting your prep listPreparing food to orderControlling waste and spoilageCleaning, sanitation, safety, and securityBeing a great team playerSetting up the dish, prep, storage, and outside areasBefore we open, and before the next shift, our areas should be 100% organized, clean, and ready for service. Make sure that:All necessary equipment is on and working correctlyAll trash from day before, if any, is taken outsideAll walkways, floors, and doors are clear and safeSanitizer solution, mop bucket, floor mats, hand sinks, and trash cans are readyRestrooms are clean and stockedStorage areas are organized and ready for any deliveriesSinks are set-up for dishes and/or prepYou have all the tools and supplies needed for the dayOutside is clean, attractive, and in good shape for our guestsThe back door, loading, and dumpster areas are clean, organized, and secured properlyYou have todays checklists and prep sheetsMaintaining the dish, prep, and storage, and outside areasThis can be the most difficult part of your job especially when were busy. Immediately ask for help before you get behind.
