Job Announcement

Oversees all aspects of supervision, administration, and management of food preparation services in a large residential treatment and detoxification facility. Responsibilities include supervision of staff of four and numerous residents in serving meals, monitoring of adherence to Health Department standards and State licensure requirements.

Illustrative Duties

  • Plans or assists in the planning of menus, ration ordering, stock receiving, and monthly inventories;
  • Trains staff and trusties in food preparation procedures;
  • Interprets policies and procedures;
  • Inspects work areas and takes action to correct health and sanitary deficiencies;
  • Ensures the overall maintenance of health standards in kitchen and dining areas;
  • Monitors quality control of all aspects of food preparation;
  • Accounts for all kitchen utensils and hardware items;
  • Prepares work statistics and management reports;
  • Recommends disciplinary action as appropriate.


Required Knowledge Skills and Abilities

  • Considerable knowledge of food preparation procedures and menu planning;
  • Knowledge of health and sanitation standards regulating the preparation and handling of food;
  • Ability to plan nutritious meals;
  • Ability to maintain records and prepare written reports;
  • Ability to communicate effectively, both orally and in writing.
  • Knowledge of U.S. Department of Agriculture lunch program guidelines.
  • Knowledge of Department of Education lunch program guidelines.


Employment Standards

MINIMUM QUALIFICATIONS:
Any combination of education, experience, and training equivalent to the following: g raduation from high school or GED issued by a state department of education; plus three years of experience in cooking and/or planning meals in a small to medium kitchen operation, specifically in food preparation, supplemented by formal supervisory training or experience in planning, directing and evaluating the work of others. CERTIFICATES AND LICENSES REQUIRED:
  • Certification as a Certified Food Manager (CFM).
  • Valid drivers license.


NECESSARY SPECIAL REQUIREMENT:
The appointee to this position will be required to complete a criminal background check, a Child Protective Services Registry check, a driving record check, and sanction screening to the satisfaction of the employer. A TB screening upon hire and annually thereafter.

All staff in this program are considered emergency/essential services personnel. (Required to report for duty during inclement weather and/or other emergencies). Day, evening, weekend, and/or holiday hours may be required.

PREFERRED QUALIFICATIONS:
  • Previous supervisory experience working in large scale and/or institutional/restaurant kitchen.
  • Experience with and knowledge of stock record keeping, maintaining stock and ordering.


PHYSICAL REQUIREMENTS:
Ability to independently drive county vehicle. Ability to lift up to 50 lbs. and push/pull weight up to 35 lbs with wheels. Ability to twist, rotate and bend at the waist, continuously stand and walk, frequently reach at or above the shoulder height, handle full or empty pots and pans, and write as needed to complete duties of the job. All duties performed with or without reasonable accommodations.
