LEAD Hot Side (Kitchen) Position

 

 

Hours & Pay: 

·         Full Time

o   Monday - Friday 3:45 AM – Noon

·         Hourly Rate w/ Paid Leave package

·         401 K & Health Insurance

                   

Primary Lead Responsibilities:

·         Key Holder / Opener

·         Work as a team with Cold Side Lead & Warehouse Lead

o   Inclement Weather Essential Employee

·         Advanced knowledge of recipes, portion specs, and operating specs

o    Handle food allergy data & proper prep procedures (Labels & Storage)

·         Delegating & Final review of tasks

·         Train New Employees

o   Continuation of knowledge building for all Hot Side Team Members

·         Display & Maintain Proper Food Handling Procedures within Team

o   Address & Educate Improper Procedures of Teammates

·         Ensure First in First Out (FIFO)

·         Assist in Cold Side/Warehouse Production & Delivery (as needed)

 

Supporting Hot Side Prep Responsibilities:

·         Prepare Pans & Pan Data (Tape Pans)

·         Assist in maintaining FIFO (First in – First Out) Usage of products

·         Ensure Usage/Accuracy in daily Production of Supplied Prep Documents

o   Care & Accuracy in Allergy Data & Prep Notations

·         Hot Meal Prep & Cooking

o   Use & Cleaning of Kettles, Ovens, Steamers, Stove Tops, Tilt Skillet, & Combi Ovens

o   Proper Portioning & Following Proper Packaging Guidelines

o   Maintain Proper Hot Holding & Hot Cooling Procedures

·         Assist in the Daily Expediting Process

·         Maintaining Food Safety & Recording Temps

·         Maintain Cleanliness of Work Area & Equipment

o   Cleaning Equipment as used

o   Refilling Glove Stations, Cleaning Solutions, Sweeping, Mopping, etc.

o   Scheduled Deep Cleaning

o   Running Dish Machines as needed

·         Assist in Special Order Prep or Cold Side Duties (as needed)
