Summary

About the position: This is a Full-Time position located with the School Age Program on Fort Eustis. Full-time positions are guaranteed 35 hours a week but can work 35-40 hours per week. This position may be subject to holidays, nights, weekends and on-call work.

Responsibilities

Prepare entire meals/snacks which require coordinating the cooking of several items with different cooking times and techniques, planning the cooking process to produce meals (breakfast, lunch and snacks) are served on time and at proper temperatures. Prepare and serve meals that meet USDA/CACFP food meal patterns and Air Force regulations. Also prepares specials foods in conjunction with special events. Perform a range of cooking tasks by preparing and cooking items that require following standardized recipes with fresh or canned food items. Prepare hot cereals, broiled meats, concentrated or dehydrated soups, sauces, and gravies, cold sandwich fillings, fish fillets and grilled or baked chicken, etc. Prepare and bake pizza with fresh ingredients. Prepare food by peeling, chopping, grinding, paring, cutting, slicing, dicing, pureeing, dredging, flouring or breading. Weighs, measures and assembling ingredients for standardized recipes. Portion foods for distribution during meal service IA W family style dining requirements and delivers to classrooms in a timely manner for established meal periods. Perfoms yield testing to determine portion cost and to adjust ingredients in standardized recipes. Follows food handler and Public Health requirements with regard to preparation, storing, cleaning, etc., to ensure a safe and healthy food operation and environment is maintained. Ensure all equipment, appliances, counters, sinks, floors, etc., are cleaned and sanitized appropriately. Clean inside and outside of cabinets, ovens, refrigerators, and other large appliances in accordance with established schedules using health/sanitation methods. Prepare all meals and snacks meeting Air Force, DOD, and United States Department of Agriculture (USDA) requirements following Serv Safe requirements. Follow approved and posted USDA, DOD, and AF menus. Performs full range of supervisory duties over subordinate cooks and other food service staff assigned to program, to include but not limited to, assigning, training, directing and reviewing work, planning, scheduling and coordinating work assignments, problem solving, arranging for needed supplies and equipment, managing leave and evaluation programs, working disciplinary and performance issue, managing employee complaints and grievances, etc. Performs other related duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if qualifying based on education, your transcripts will be required as part of your application.

Qualifying Experience: Must have at least 2 years' experience in and knowledge of food preparation principles and characteristics of food, and of planning processes to ensure entire meals are prepared and cooked on time. Post-secondary education in culinary/hospitality field is desirable. Experience supervisory employees engaged in cook duties is also desirable. Must be able to perform yield testing to determine portion cost and to adjust ingredients in standardized recipes. Must have knowledge of procedures to order, issue and store food. Experience and knowledge must have been gained in a grill, snack bar, restaurant, club or similar food activity. Must be at least 18 years of age, hold a high school diploma or equivalent, read, speak, and write English, successfully pass a pre-employment physical, maintain current immunizations and be physically and behaviorally capable of performing the duties of the job. Must be physically able to frequently lift objects weighing up to 40 pounds, and occasionally over 40 pounds. Must be able to continuously stand, walk, stoop, reach, push, pull and bend for long periods of time. Must be able to obtain a Food Handler's Certificate and/or complete food handler's training.

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does allow for education substitution in order to qualify.

FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program. It is your responsibility to provide such evidence when applying.
