Manually shuck raw oysters and clams to order preparing orders with consistency and a sense of pride.Prepares a variety of oysters and clams to Phillips specificationsAssumes 100% responsibility for quality of products servedKnows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and proceduresStocks and maintains sufficient levels of food products on line stations to assure a smooth service periodPortions food products prior to cooking according to standard portion sizes and recipe specificationsComply with all State and Local Health Department guidelines regarding cleanliness and tag retentionMaintains a clean and sanitary work station area including tables, shelves and refrigeration equipmentFollows proper plate presentation and garnish set up for all dishesHandles, stores and rotates all products properlyCompletes required tasks within assigned time framesTracks and reports any food wasteAssists in food prep assignments during off-peak periods as neededOpens and/or closes the kitchen properly and follows the appropriate checklists for kitchen stationsPrepares only items generated from the restaurant POS systemPerforms related duties such as helping to wash dishes as needed, preparing recycling, cleaning around restaurant and help with any other projects as assigned by the kitchen managerIf a meal is returned for any reason, follow Phillips SOP to correct the problemAttends all scheduled employee meetings and brings suggestions for improvementPerforms other related duties as assigned by the kitchen manager on duty
