Summary

About the position: This position is with the Director of Administration, Department of Nutrition with the Walter Reed National Military Medical Center located in Bethesda, MD. The work is performed in the kitchen area where steam and heat from cooking and dish washing equipment often cause uncomfortably high temperatures and humidity.

Responsibilities

  • The incumbent sets up cafeteria lines, steam tables, dining room tables, and side service stands with hot and cold food items including meats, vegetables, salads, desserts, bread, butter, and beverages.
  • Serves food cafeteria style by placing uniform portions of food on customers' plates.
  • Breaks down and cleans assigned area when the meal is finished, and returns food to the main kitchen.
  • Sets up dining room tables for service, places napkins, salt and pepper shakers, etc., and replenishes items as necessary.
  • Returns soiled trays and dishes to the dish room after meals.
  • Assists patients through the serving line by placing food items on their tray, and carries trays to diners' table.
  • Brews coffee according to the number of servings required.
  • Assembles and tosses fresh fruit or green salads in quantity, using prepared dressings and portion into standard serving sizes.
  • Apportions other food items (e.g., gelatins, juices, and desserts) into standard serving sizes using proper utensils and containers.
  • Makes cold sandwiches using prepared ingredients and pack box lunches.
  • The incumbent sets up and operates a mechanical dishwasher, including the continuous conveyor belt feeding dishwasher.
  • Removes inspection doors, strainer pans screens, and spray arms for prevention maintenance and cleaning.
  • Scrapes, soaks, scours, and scrubs the heavier cooking utensils such as mixing bowls and pots.
  • Performs heavy-duty cleaning tasks throughout the food service and related areas, such as cleaning ceilings and transoms; cleaning exhaust hoods; cleaning spaces under and behind kitchen equipment, including moving the equipment.

  • This position requires the incumbent be able to obtain and maintain a determination of eligibility for a Tier 3 security investigation or access for the duration of employment. A background investigation and credit check are required.
  • This position requires the incumbent to have tuberculosis testing.

Minimum Qualifications (Screen Out Element): Ability to do the work of a(n) Food Service Worker without more than normal supervision. Setting up and cafeteria lines, steam and dining room tables; Side service stands with hot and cold food items such as meats, vegetables, salads and desserts in a fast paced kitchen environment; Also have experience utilizing a commercial dishwasher, operating commercial garbage disposals, and following established sequences of kitchen work. - Failure to meet this Screen Out Element will result in an ineligible rating.

  • Physical effort: The worker is subject to continuous standing and walking, and frequent stooping, reaching, pushing,pulling,and bending. The worker may be required to work on ladders and perform heavy work such as scouring and scrubbing large siz cooking utensils and moving heavy carts and trucks in unloading, storing, and delivering supplies. They frequently lift or move objects weighing up to 40 pounds.
  • Working conditions: The work is performed in the kitchen area where steam and heat from cooking and dish washing equipment often cause uncomfortably high temperatures and humidity. The work area is well lighted but usually noisy from food service activities, and there is danger of slipping on floors where food or beverages have been dropped. The worker is regularly exposed to hot liquids, sharp cutting blades, hot working surfaces, and fluctuations in temperature such as when entering walk-in refrigerators or freezing units.
