Ridgewells Catering is seeking an experienced culinary professional to join our growing kitchen management team, working closely with the Executive Chef to manage menu production details for a wide range of high-end off-premise events and contract accounts. This sous-chef level position is responsible for managing the kitchen office and, in particular, the flow of information between sales and the kitchen. Responsibilities:Review, process and manage large quantities of menu and prep item dataQuantify menus and detail prep item information for each menu item to be producedManage the printing and updating of kitchen production menus, prep sheets and purchasing detailsCommunicate and collaborate regularly with the sales team on menus, production updates, special requests, ideation of custom menu concepts, etc.Assist the Executive Chef as needed with menu development, food production plans and kitchen organization, production of high-quality dishes with impeccable presentation, etc. Qualifications:Minimum 5 years professional experience in high-volume, custom catering productionStandard culinary knowledge as it relates to catering is essential (eg, kitchen workflow, portion sizes, common dish components, style and quality standards, etc.)Ability to work in a fast-paced, high-energy environment with keen organizational skills A team player with a positive, helpful personality and strong relationship-building skillsDegree or certificate from a Culinary Institute or college a plusGeneral computer software skills required; experience with CaterXpert or similar a plus How to Apply: Please put "Catering Kitchen Production Manager" in the subject field of email.
