James Beard award-winning Woodberry Kitchen, is hiring for a Chef de Cuisine. If you have the following skills, and an interest in elevating the highest quality meats, fish & shellfish, grains, and produce, the area has to offer, to another level, we want to talk to you. Our ideal candidate has six to eight years of high volume, fine dining, cooking experience and has mastered the basic skills of working with a high level of organization, overseeing multiple functions at once, staying meticulously clean, and collaborating with a team. This person should also have four to six years of management experience ranging from hiring, scheduling, and disciplinary action for a team of 20+, to inventory controls and utilization, labor controls and implementation, and financial analysis of aP&L. The best candidate demonstrates an appreciation for handling and working with only locally sourced ingredients and has all of the necessary skills to treat them with the proper care and respect, from butchering to vegetable prep, from advanced traditional cooking techniques to open fire hearth cooking and smoking, from refined sauce making to extraordinary plating skills. We want someone who is driven and has a creative mindset to assist our chef/owner, Spike Gjerde, in developing a world class restaurant that creates a new menu every day. While technical skills and experience are necessary, having an understanding and passion for making a direct impact on the agriculture and restaurant landscape in Baltimore would be highly valued as well.
