POSITION DESCRIPTION Make a meaningful impact as a Prep Cook with Vim and Victor, a new restaurant by Chef Spike Mendelsohn at The St. James Sports and Wellness Complex. All team members receive a complimentary health club membership. Take a position with an organization that cares about you taking care of yourself. The primary function of the Prep Cook is to prepare high-quality food for all members and guests of the Vim & Victor Restaurant. The Prep Cook is responsible for timely and accurate preparation of made-to-order food and accurate preparation and plating of food items based on brand specs and BEOs. The Prep Cook will have sound technical skills to in all of the areas described in the performance objectives below. The Vim and Victor restaurant is located in Springfield, VA within The St. James complex. The St. James is the premier sports, wellness and active entertainment destination in the country, with 450,000 sq. ft. of developmental and competitive programs, teams and opportunities in more than 30 sports, and a wide range of premium fitness, wellness and entertainment experiences. RESPONSIBILITIES Reports to work on time and is on the prep station as indicated on the weekly work schedule. Uniform meets restaurant requirements of cleanliness and appearance. Practices positive personal hygiene and cleanliness habits during all work shifts. Prepare food items, preparation equipment, small wares, plate ware, food ingredients, garnishes and supply items needed for effective operation of the station. Reports any problems or discrepancies to Sous Chef/Chef on a timely basis. Assists other kitchen personnel in food preparation and side work according to prep lists. Preps all food product according to the standards and proceduresof the Vim and Victor restaurant. Preps all food to ensure that all items are prepared according to company specifications, recipes, procedures, plate presentation and quality standards. Ensures our guests have a superior dining experience by correctly prepping food products. Maintains the highest degree of sanitation, cleanliness and food safety for work area to include prep tables, counter tops, refrigeration units, floors, walls and shelving. Accomplishes all job duties while adhering to all safety guidelines and practices throughout the shift. Immediately reports any unsafe condition or unsafe act, accidents and/or injuries to the Sous Chef/Chef. Correctly completes all station closing duties at the end of each shift. Assists Sous Chef/Chef and other kitchen team members in accomplishing closing duties and kitchen cleanliness. Other duties as required by the Food & Beverage Director, and/or the Leadership teams of The St. James for the successful operation of the restaurant Supporting the safety of all members, guests and employees. QUALIFICATIONS A high school diploma and at least two years of experience cooking in a hotel, cruise ship, or restaurant; or a two-year college degree and one year of related experience, or a culinary degree Familiarity with and the ability to utilize kitchen cutlery, automatic slicers, buffalo chopper, blenders, band saw, meat grinder, gas-fired cooking equipment, steam kettles, electric griddles, deep-fat fryers, ovens, till fryers, toaster, scales, can openers, Carter-Hoffmann and other culinary tools. Clear concise written and verbal communication skills in English; second language is an asset Must be flexible in terms of working hours, including work long hours High-volume experience preferred Certification in Food Safety strongly desired Must be able to work in a fast-paced environment, must be physically fit in order to lift, pull and push items up to 50 pounds. Also requires standing/walking/reaching and bending throughout shift.
