The Front of House Manager (FOH-Manager) works with and supports the GM to achieve their goals. You represent the voice and the vision of the GM when they are not in the building. The FOH-Manager is accountable for the success of all operational departments with a focus on guest service, staff development and systems improvement. In doing so, the FOH-Manager is responsible for understanding the full functionality of each operational department, including Register, Runner and Expo, as well as kitchen efficiency and product execution. The FOH-Manager supports and implements the objectives determined by the GM and KM. In addition to executing systems improvement and monitoring all aspects of guest service, the FOH-Manager must learn and master the competencies necessary to become a GM and act in place of the GM as necessary. The FOH-Manager openly supports the companies' management system and actively practices our core beliefs. The FOH-Manager enforces company policies, procedures and performance standards with fairness and consistency, and functions as a role model, counselor and leader of the restaurant. CORE JOB REQUIREMENTS Oversees all aspects of guest experience, including: o Atmosphere o Hospitality o Food o Beverage o Safety o Service Actively and positively engages with our guests and fellow team members o Practices active listening skills in guest interactions o Resolves and follows up on in-store guest complaints Designs and monitors floor plan, matrix and service levels Conducts themselves in a positive manor 100% of the time GENERAL OPERATIONS Understands how to operate every front-of-house and back-of-house position Understands food and beverage recipes, measurements and presentation specs Understands and performs inventory and inventory reporting Understands how to write and manage daily shift matrixes for an entire week Understands how to write and manage a weekly schedule according to the labor matrix and labor cost budget Understands how to order, manage and inventory, manage every ingredient and product in house FOOD QUALITY Understands company product quality, preparation and service standards Performs consistent line and food quality checks Inspects all product to make sure it is being stored and rotated properly according to storage specs (FIFO) and shelf life dates Understands and enforces cleanliness and sanitation standards Ensures that tickets time standards are met without pre-cooking proteins (10 minutes during lunch service and 12 minutes during dinner service SALES Monitors sales goals and sales trends Enthusiastically supports and implements new products and promotions COST CONTROLS Meets cost controls according to their assigned AOR (Area of Responsibility) Follows cash management/handling procedures Performs accurate and timely inventory counts Understands and follows the operating budget Identifies and addresses variances Monitors and enforces theft controls RESTAURANT CLEANLINESS& MAINTENANCE Practices preventative maintenance schedule Follows and enforces food safety standards according to local health codes Supports"like new" store and storage room appearance TEAM DEVELOPMENT Hires new hourly team members Ensures consistent staff communication Improves staff knowledge through individual training Oversees service operations to ensure quality and consistency Works the floor every shift to ensure proper execution of standards Conducts shift Meetings Provides input at the manager meetings regarding operations for the entire restaurant AREAS OF ACCOUNTABILITY Guest in-store concerns, complaints and delight Effective managing of restaurant when GM is absent Product and service execution Ongoing operational knowledge of Bartender, Register, Runner and Kitchen positions Staff training and development Builds a safe and positive work environment for employees and guests alike Maintains proper staffing levels Identifies quality improvements Follows health code and actively insures compliance Follows ABC laws and actively insures compliance
