Sous Chef Job Description Who are we? Ashling Restaurant Group (ARG) is a young business looking to build a team who is eager to grow with the business. ARG has come to existence due to our catering business (Ashling Market & Catering) where we cook backstage for artists in the music industry. One of the two owners have been a Tour Manager in the industry for the past 6 years and decided it was time to come off the road and start something here at home. She knew how important catering was for the artists while on the road. Remembering just how difficult it was to get a simple home cooked meal in an environment that felt warm and welcoming. After launching the backstage catering company two years ago, the owners have begun expanding into the first restaurant concept. An environment where we are able to bring all the same important elements of our backstage catering which serves high end clients to a restaurant where patrons can enjoy the same like-kind experience. Offering our patrons that homey feeling when they walk thru our doors, with good music vibes, top notch food, undeniably great service, and fun interactive ways to engage with the guests through our music connections. What do we do? Here at Ashling, you will have responsibility with working under the executive chef between two different divisions of our company as needed. Our portfolio includes The Lyric in Baltimore, MECU Pavilion (formally Pier 6), and we are close to obtaining other major venues for next season. On top of those contracts, we have a good working partnership with University of Baltimore, UMIH, and other various partners in the Baltimore area who use our catering services when needs arise. We are transitioning from cooking in Baltimore to running everything from our new restaurant where we are currently building out in Crofton, MD. This will be a unique operation whereby guests can actively be engaged with who we are feeding that day in our catering and bring it to life in the restaurant through fun ticket giveaways for that show and interactive music trivia nights. With all the various activities, givebacks to the community, and active engagement in the community, we are sure that our energy, uniqueness and creativity will bring our guests coming back regularly. Working with executive chef to create menu with standardized recipes . Ability to create specials for the restaurant or catering . Scheduling and monitoring of the kitchen staff either for catering or restaurant . Assist in interviewing, training & development of culinary and general kitchen staff . Maintaining kitchen safety and sanitation standards . Placing orders & inventory control of the food products . Maintain equipment in good working order by assisting with cleaning / scheduling and crew upkeep. . Create work order tickets for repairs . Partner with FOH & GM to achieve department goals . Attend designated meetings to review financials, planning, & vendor partners . Complete other duties as assigned Basic Qualifications: . Must be at least 21 years of age of older . Must have a valid driver's license and means of transportation . Minimum of 2 years' experience in kitchen management with revenue streams of a minimum of $1.5 million of restaurant sales . Minimum of 5 years' experience in food preparation Additional Qualifications: . Catering experience a plus with managing a $1Million dollar operation . Strong knowledge and experience in in upscale Americano dining restaurants . Ability to convey information, work within strict deadlines, multi-task, and react quickly and effectively to challenges . Bilingual a plus but not required . Possess a valid ServSafe Certification . Ability to lead a team utilizing great organizational & communication skills . Degree in culinary arts preferred Working Conditions: . Ability to carry and lift up to 50lbs, walking, bending, and standing 90% of the shift, and working in different temperatures / environments . Schedule will vary according to operational needs including some holidays, weekends and long shifts . Great personal hygiene is a must Job Type: Full-time
