Reporting directly to the General Manager, the Culinary Manager will ensure Operational Excellence across all facets of the restaurant by instilling high standards and delivering superior results in all areas of the business - food cost, outstanding food quality, profitability, ordering and par management , training & development, and facilities management. The Culinary Manager will accomplish results through high level leadership behaviors (The How vs. The What) as outlined in this job description. The Culinary Manager is expected to operate successfully through people with influence and inspirational leadership to achieve outstanding results. The Culinary Manager will effectively communicate and model the company vision and brand standards to all members of the management team and hourly team.Essential job functions:Ensure all menu items are consistently prepared and according to Cheddar's recipes, portioning, cooking and serving standards.Responsible for safety and sanitation procedures and standards in the HOH on each shift.Ensure all culinary team members are trained on Cheddar's safety and sanitation standards and procedures.Maintain communication between FOH and HOH during each shift to ensure timely and accurate preparation and service of all meals to our guests ensuring a Wow guest experience.Ensure all orders are received and stored according to Cheddar's standards.Follow Cheddar's guidelines for production to ensure proper prep levels for each shift. Oversee and direct each culinary team member on their area's prep list to ensure recipe adherence, adequate prep levels according to business projections and completion of prep in a timely manner.Maintain staffing levels in the HOH through proper hiring, training, development and scheduling of culinary team members.Control and maintain food cost and usage by proper ordering, rotation and storage of products, recipe adherence and waste control procedures.Responsible for the maintenance and cleanliness of all kitchen equipment, floors, walls, walk-in coolers and storage areas.Must check and maintain proper food holding and refrigeration procedures. Each shift complete a Quality Food check and record temperatures and food quality.Each shift complete a HACCP checklist. Record and address all issues.
