Manor Country Club in Rockville, Maryland, is conducting a search for a Executive Sous Chef who loves the culinary arts and is passionate about delivering an amazing member dining experience every meal, every day. This is a wonderful opportunity to assist in leading the culinary team and to join a fantastic group of managers at a private member owned club. Annual food and beverage revenues are $ 3 million dollars.
The Executive Sous Chef assists the Executive Chef in monitoring all food service outlets and banquet functions as well as the overall supervision of the culinary team. In addition the Executive Sous Chef assists in overseeing and supervising the work of all culinary personal to insure a high quality professional, food service operation. The Executive Sous Chef assists in menu development, food purchase specification and recipes.
Ability to interface with a diverse membership and coworkers via excellent communication and interpersonal skills.
Assists in training and supervising of hourly culinary staff.
Assists in scheduling and coordination of culinary and utility staff members to assure that all production needs are met.
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.
Cooks or directly supervises the cooking of items that require skillful preparation.
Evaluates food products to assure that quality standards are consistently met.
Assists in motivating staff including cross-training and promotion for all culinary staff
Assists in end of the month inventories.
Undertakes special projects as assigned by the executive chef.
Requirements to include:
Motivated, energetic, and friendly, dedicated to the culinary profession
2 + years of culinary supervisory experience. Culinary or related degree is preferred.
Proficient in general computer knowledge.
ServSafe certified or willingness to complete to become food handler certified in the state of Maryland/ Montgomery County MD.
Excellent verbal and written communication skills.
Salary and benefits:
Salary is commensurate with qualifications and experience. Salary range is $55k-$65k The club offers an excellent benefit package including medical/dental/life and disability insurance, 401 (k) with employer match, paid vacation and sick leave.
